This fall, the iconic Grand Hotel Millennium Sofia opens its new restaurant, The Gallery Fine Dining Restaurant, in collaboration with one of the most talented and renowned names on the Bulgarian culinary scene - Chef Sevda Dimitrova.
Inspired by the relentless pursuit of perfectionism and the achievement of gastronomic perfection, The Gallery promises to be a place for connoisseurs of the culinary arts. An avant-garde gallery of flavors and aromas, harmoniously intertwined in daring combinations to offer new sensations and challenge the mind beyond the limits of the familiar.
Chef Sevda Dimitrova and her team follow the line of constant change, perfecting techniques and redefining culinary axioms with the aim of the ultimate culinary experience. The Gallery's menu draws inspiration from the constant cycle of nature, the region's multi-layered history and the masterful hands and creative minds of the team behind it.
Unbounded by boundaries and frameworks, but inspired by the culinary heritage of the area, The Gallery Fine Dining Restaurant will offer the best local and seasonal products. Each dish carries the spirit of the season, balanced with traditional flavors achieved with familiar techniques such as lyophilization, aging of meats and fish and fermentation. The transformation of familiar rustic flavors and their subtle transfer from everyday life to haute cuisine will create an unknown culinary adventure of a perfect balance of flavors, aromas and colors.
To achieve balance with nature, The Gallery is committed to sustainability. The team follows the philosophy of zero-waste food preparing, striving for minimal waste and maximum utilization of resources. Every ingredient is used with the environment in mind, the organic waste is composted.
The full experience at The Gallery is perfectly complemented by the extensive wine list created by the head sommelier Blagoy Kuzmanski. With over 500 items, including the best wines from Bulgaria and classic regions such as Burgundy, Bordeaux, Champagne, Piedmont and Tuscany, The Gallery's wine list will be the richest in Bulgaria and will offer wine that is available in the best restaurants in the world.
